Summary: The phenomenon of electro osmosis becomes widespread in recent years in the processing and
food industries as a process of fine division of heterogeneous systems containing sharp phase. When drying pectin
content material there is a need to improve the efficiency of removal of bound moisture provided to minimize damage to the cell structure, that can be realized by electro osmotic displacement of water.
