Summary: Abstract. The article provides a detailed review of technologies and techniques of oilseeds extraction. The principal structural scheme of oilseeds processing is developed. The main attention is paid to the waste-free oil and fat complex, from the improvement of prepress preparation of seeds to the extraction of meals with the output to almost complete extraction of the valuable component using solvents. Also, the oil and fat industry has undergone the most effective rate of development due to the intensification of extraction processes by the influence of various physical and mechanical factors. One of such factors is the influence of microwave field on the extraction process. The article presents foreign and domestic studies on the effect of electromagnetic field on the extraction of valuable components in the food industry.
